We are excited to announce the arrival of Chef Shinzu Hiroyuki, our pâtissier, who aspires to create sensory experiences for guests. Born and raised in Shizuoka, Chef Hiro is an artist infusing tapestry of Japanese and French flavors while injecting certain pastries and dishes with hints of Australian and Hong Kong culture. Along with his ‘Paris Brest’ and other iconic French desserts, Shinzu finds himself in perfect harmony with the rich and sweeping palate of TIRPSE.

Hosted by K11 MUSEA, Art Karnival 2023 is here. Chef Rin has taken inspiration from Banksy’s ‘Love is in the air’ bouquet of colourful flowers and given it a sweet interpretation. The wrapping paper which surrounds the bouquet is re-imagined as a thin buckwheat crepe which wraps and presents all the delicious, sweet treats of the ‘bouquet.’ Chef Rin named this special creation of his ‘Bouquet de la paix’ . A rich chocolate ice cream with a flourish of chocolate tuile adds movement and texture to the plated dessert. Stems of white chocolate along with delicate mini daisies and chocolate flowers dot the bouquet.
Like Banksy’s work, which is known for its bold, modern themes, splashes of vibrant ‘paint’ appear on the plate in the form of ruby red beetroot powder. The sweet bouquet is held in place by an arm, stencilled on the plate in white chocolate.
Guests can enjoy this limited-edition edible art which engages all the senses for a limited time only from 20 March – 14 May, 2023. Dessert will be available in our a-la-carte menu during lunch & dinner. Or supplement $108 when ordering dinner set to enjoy.
Introducing The All New Summer Menu 2022
The Tirpse summer 2022 menu is a walk through the best seasonal ingredients available from around the world and features Japanese oysters, Australian Wagyu, ducks, and wonderfully sweet cherries from France, along with succulent and incredibly fresh lobster, flounder, shrimp and other delicacies paired with locally sourced ingredients that coax the flavours and textures out in every bite.
Named Hong Kong’s best pastry chef 2022, Rin Horiuchi’s dessert creations continue the theme of inter-playing textures and flavour to contrast and complement. The unique hybrid flavour of ground berries which can be pushed into either a savoury or sweet flavour profile based purely on which other ingredients is it paired with takes centre stage in the mini dessert. To conclude a lavish meal, Chef Rin has created an exquisite main dessert with classic French flavours and satisfying textures. Sample Rin’s rendition of French staple and iconic dessert, Saint Honore. It’s only through a true understanding of flavour and how to manipulate ingredients that the interplay in Chef Rin’s two stunning desserts can be achieved.

Together with Links Concept, we are hosting a 6-course wine dinner on 25th May (Wed) featuring wines across regions in France for the first time. This exclusive experience is for 24 lucky guests only! Among 6 perfectly paired picks: Champagne Louis Roederer Collection 242 – classic & exceptional cuvée with ripe fruit character from the top Champagne house. Domaine des Senechaux Châteauneuf-du-Pape Blanc, a refreshing white from Rhone Valley with floral notes & aromas of citrus fruit and Chateau de Pez, a classic Bordeaux red with red fruits & smoky notes also from the Roederer family.
